Когда я выполняю systemctl start mysql
он запускает MySQL, но я не возвращаю командную строку, она просто остается такой. База данных запускается нормально. Через пару минут база данных автоматически отключается, и systemctl сообщает об ошибке.
Я тоже пробовал systemctl start mysql --no-block
он немедленно возвращает командную строку, но через пару минут база данных снова отключается.
База данных не аварийно завершает работу, это полное завершение работы, поэтому я подозреваю, что systemctl выдает сигнал завершения работы через некоторое время.

Что если вы измените эту часть в my.cnf
[MYSQLD_SAFE]
pid_file=mysqld.pid
быть
[MYSQLD_SAFE]
pid_file=/var/lib/mysql/mysqld.pid
Я предполагаю, что systemd убил MySQL, потому что он не нашел правильный файл pid, содержащий номер процесса в этом месте.
В вашем файле my.cnf измените следующую строку
[MYSQLD_SAFE]
pid_file=mysqld.pid
на ваш реальный путь
на моем это
pid_file=/var/lib/mysql/mysqld.pid
